Holiday Gluten-Free Stuffing Recipe

We have been incredibly lucky that throughout the pandemic and recent economic struggles, we have been able to get out our bread and experiment to create new flavours and products to best serve our customers' appetite.

As a thank you, we are sharing our newest Holiday Gluten-Free Stuffing Recipe recipe that uses local ingredients for you to try this holiday season. What better way to spend this holiday season than with your loved ones around the dinner table.

Our Holiday Gluten-Free Stuffing can be a great addition to any meal. You can use our signature Buckwheat Sourdough Loaf as the main ingredient or you can substitute it for another one of your favourites. To make this delicious recipe, follow the steps below.

Ingredients

  • 9 cups of cubed Buckwheat or Millet Sourdough bread
  • 1 medium diced yellow onion
  • 4 sticks of diced celery 
  • ½ cup vegan butter
  • 1 ½ tsp dried thyme
  • ½ tsp ground sage
  • ½ tsp rosemary
  • 1 tsp salt
  • ½ tsp pepper
  • 2 cups vegetable broth

Step 1:

Get your loaf of Buckwheat or Millet Sourdough and cut into 1-inch cubes for 9 cups. Let the bread air dry for 1-2 hours. 

Step 2. 

Melt ½ cup of vegan butter in a Dutch oven over medium heat. 

Step 3:

Add your diced onion and celery to the Dutch oven and cook until the onion is soft/translucent.

Step 4:

Stir in thyme, sage, rosemary, salt & pepper.

Step 5:

Add cubed bread and stir until evenly coated. 

Step 6:

Add broth and toss all ingredients until it is evenly mixed. 

Step 7: 

Cover Dutch oven and bake at 375F for 35-45 minutes.
